Les Ecuries is a welcoming brasserie in a gracefully restored 19th-century stables building on the bank of the Semois in Bouillon. The original wooden beams, the cast-iron pillars and the high windows reveal the building's original purpose, while the interior is fitted out in a contemporary style. The menu focuses on regional dishes featuring Ardennes veal, trout from the Semois and game in season, alongside local beers including those from the Brasserie de Bouillon.

The renovation explicitly took accessibility into account. The main entrance has a flush automatic sliding door. The spacious open dining room is at ground level and offers plenty of manoeuvring space between the tables, partly thanks to the originally generous proportions of the stables. An adapted toilet with grab bars, alarm cord and turning space is available on the ground floor. The terrace along the Semois is reached via a ramp.

A paved car park with adapted spaces is fifty metres from the brasserie, with a flat route. The promenade along the Semois is largely paved but contains a few uneven sections; the parallel route past the castle, by contrast, has steep gradients in places that can be challenging for independent wheelchair users.
